Defrost yourself & make a margarita!

Cinco de Mayo is less than a month away and it's time to start planning a get together! Mexicans call themselves a people who are "muy festivos", or big party givers who have food & gatherings as frequently as possible for just about any reason. They realize that time spent together makes relationships strong and it creates wonderful memories for the family.

Last Sunday I spoke to my Aunt Margaret who lives in Lincoln, Nebraska, where winter has lasted over 5 months. She's so tired of soup and ready to make some spicy enchiladas and invite some friends over to eat in the patio! (Actually, Auntie M is more predictable than a ground hog about when Spring will arrive!)

So, use Cinco de Mayo as the excuse to party! Create a taco bar or grill some delicious carne asada on the BBQ, make a yummy fruit salad with mangos & strawberries and a big batch of margaritas. Don't forget to dazzle everyone with a new, colorful oilcloth!
